Does anyone know what Apple's policy is on third party repairs? Will they still service an iPhone that's had a third-party repair?

All good, I didn't think it was you. Some other member who thinks I'm a numpty but not realising your post got revised.
If they can tell (eg 3rd party display) generally they wont touch it. Thats been my experience - bought a second hand phone from a store who said it was not repaired or refurbished (totally original). Took it to apple the same day to get a new battery under their $39 deal at the time, and they could tell instantly it was not a genuine display and refused to touch it.
I took it straight back to the store and got a refund.
I think the answer is to call them or make a Genius Bar appointment. I expect they would try to help but explain if they couldn't; like @lunchbox99
i messaged them on live chat and they said they service as long as its an apple device
Third party repairs are fine
if those repairs caused further damage then your warranty is voided
