I have an ASUS K6502VU
I want to upgrade the ram. According to Crucial web site it is compatible with 1x 32gb 5600 RAM slot.
But I just wonder, can I install 48gb 5600 DDR5 on this system too or should I stick with 32gb 5600?

According to Asus specs it says there are 2 slots but 1 is on board. Also says maximum total system memory is 16gb. So you'll need to do more research as to the maximum allowed.

Where are you getting the 48GB sodimm from as I cannot see any.
Unfortunately your laptop has 1 x sodimm memory slot used that you can use as one is used by the memory on the motherboard and it's only 8GB. So if you do swap out the 8GB sodimm with a higher capacity the overall memory speed will slow down as they are different sizes.
If you are running out of memory then you will need more memory and the only option is to swap the 8GB sodimm out.
The Asus spec limit is what Asus sell, not what the CPU supports.

As I understand it, it will work in dual channel up to 16GB (2x8GB) but once beyond this it will run the equivalent single channel.
Correct. Currently 16GB is 1 x 8GB soldered on the M/B and 1 x 8GB SODIMM in a slot.
It would still better to have extra capacity at single channel than having to free memory to fit under 16GB of usage

I wouldn't be surprised if they're getting a 48GB kit (2x24GB)
The general rule is that with only one memory slot occupied the computer will be slower. But you will have an empty slot available for expanding the amount of memory later if you want to. Choose which is more important to you.
