Just got off the phone with Coles. The deal is not stackable. It's 1,000 points for a on-off item, one-time only per account.
I got my points today and they did stack. Shame we weren't 100% sure they would stack or I probably would have bought more.

The OP has different advice from another Coles rep that stacking will work. I'll give it a go and see what happens. Worst thing is I'll have a load of wine to get through.
