Maryland is $20/kg from Woolies when on sale (happens regularly). Easier to handle than a whole duck.

Maryland is for the weaks! Shove an empty bottle up the whole duck's bottom to dry the skins out, then stuff it with some oranges, apples, brown onions and herbs and then roast it in convection oven is the way to go. Skin's crispiness might vary depending on how dried out the skin you could get but I've found them to be quite ok for home cooking.
I normally twice cook them. Slow cook then oven for 30mins after fridged overnight . On a bed of potato.
thing is i think you cannot come close to how the professionals do Chinese roast duck
but that duck is like $35 for a whole duck and its damn not near 1.9kg
can anyone really do duck ok at home? maybe with gas covered grill?
I roast it then eat the wings, drumsticks and the crispy skin that almost make me feel nauseous cus it’s so fat lol The rest goes into noodles and soup because they can get dry. Very far from Asian shops but I still love it better than any other meats.
