There's a bit of rambling in this post (a tad lengthy, but I believe worth mentioning), so if you're flat chat just skip to the detail details below in bold

Get excited, the shipment of our much loved Brazil São Paulo Single Origin just cleared customs. Based on the stream of messages we've received about when we'll have more Brazil you've been eagerly awaiting this post as much as we have….time to get the restock deal party started!

If either of the coffee in this deal are winners for you I'd highly recommend placing a few orders today utilising our unique scheduled/delayed dispatch system to make the most of this deal pricing. Now I know you may be thinking "of course you want us to place more orders" and you would be correct, more order are of course better for us too. However, I write this message to you as a friendly heads up that future deal pricing is promised to no one. All our costs have gone up, not a complaint, just a fact of normal business and I'm happy to let you know we've been able to eat the green/raw coffee increases to keep our prices stable. My concern and the reason for this heads up about the future (tomorrow won't change, but 1or 2 months from now who knows where things will be) is I don't know if we'll be able to prevent our prices increasing in the relatively near future. As always, we'll do our best to keep things in check and my hope is that a couple of months from now I look back and think "I needn't have even written this paragraph," but my gut says otherwise. Prices for raw/green coffee in recent times have gone higher than peak Covid prices and the concern is because it's not just shipping delays (which frequently happens) and FX rate changes (coffee is traded in USA so when the AUD drops coffee goes up), the main issues are to do with current crop yields at origin causing shortages, specifically in South/Central American regions and due to how much coffee is grown their that impacts global supply. History shows shortages and large price spikes leads to companies with large cash reserves stockpiling to protect their interests (which of course makes sense for them to do), this increase in demand, further shortens supply and increases prices and so the cycle continues….anyway enough ramblings from me, the point being if you love either of these coffees please do yourself a favour and lock in this deal pricing today to cover you for the next few months, to assist with this I've extended future dispatch date availability up until the end of October this year.

        Everyone is different but I think it's the nicest bean from LimeBlue for a long black, followed by the Moments to Memories blend. I personally like to make it with a ristretto of only 15-20 seconds (as opposed to the usual 30 sec. for a milk coffee) using the doubleshot filter basket and then top up with hot water in a large mug. It's a great balance of intense bitter flavour without being overpowering and the underlying sweetness of the finish.

          Double ristretto with 3/4 milk in a cappa cup is a melb magic which is my go to drink
          Generally lighter roast single origins favour black drinks.
          This is an Omni roast but Brazilian beans tend to have more acidity and less boldness making this ideal for long blacks

      Apologies for any inconvenience caused, our primary grinder is currently out of commission, hence why the current options are whole beans. Might be a perfect opportunity to take the plunge and get a hand grinder, which should improve your coffee flavour experience ten fold :)

    Thanks for the update Tom - maybe price increases are a turn off for some people, but I imagine many customers are far more understanding when the business explains how it's out of their control (short of running at a loss!).     Love your work Tom, have locked in 3kg now, and another 3kg a month delayed order x3, averaging about 2kg a month on my own usage and the spare kg is for visitors and occasional gift a bag, can’t go wrong !

With regard to freezing, I have read that frozen beans need to be used fairly quickly after thawing to retain flavour. Not sure whether this is true, but can you please advise the best process if I am freezing 1kg bags. Should I perhaps decant into smaller bags before freezing? Cheers

      Great question, which you've you've virtually answered yourself, fully respect for the efficiency of question and answer all wrapped up in a single message haha. The time frame of best coffee enjoyment once thawed really comes down to how the coffee was frozen in the first place, specifically how long after the roast date was it frozen.
      "As mentioned (below fresh) coffee is best enjoyed within roughly a month of the roast date. Freezing essentially hits pause on the shot clock. For example, if you freeze the coffee 1 week after the roast date, then when you take it out of the freezer it's best enjoyed within roughly 3 weeks. Next to single dose freezing, I'd say the ideal balance of convenience mixed with flavour enjoyment, is to pre-portion your delivery into two week portions then 1-2 weeks after the roast date put all the fortnightly portions into your freezer :)"

    I love the Brazil SO, and that's my preferred flavour profile. I make flat whites at home.

    I made an order a couple of days ago for the Peru SO. The notes suggested it also works well for white coffees. Just wanted to see if there's anything else I need to take into account as I use these beans.

    If you don't recommend the Peru for whites then should I try and get my order switched to Brazil? Cheers

    How long can i keep the beans for without freezing (no room i the freezer)? Is it still good after 3 months?

    Planning to buy 3kg for the free delivery. We go through roughly 1kg a month.

      3kg sounds like a terrific order, can't blame you for shooting for the free shipping. Fresh coffee is best enjoyed within roughly a month of the roast date when stored at room temp. Thereafter, oxidation rapidly increases and the coffee starts to lose it's delicious flavour and goes stale. Roasted coffee is a shelf stable product, so when it goes stale it shouldn't make you sick, it just won't taste very nice. If I were you and there was no way to clear your freezer any time soon, I'd knock on two of your neighbours doors and see if they'd like to pool a coffee order with you. That way you get to enjoy the good stuff in peak flavour, don't need to buy a second freezer, unlock free shipping and maybe even bank some good will with your neighbours too :)

      • This is what I planned to do with my 3kg order (similar consumption as yours per month) - instead of pooling I thought of sharing the love with a couple of friends who happen to be coffee fans! With given popularity these will be perfect gifts for casual drop ins!

      Great question, the answer depends on why your wife doesn't drink (tea or coffee), is it due to personal flavour preference, lack of enjoyment for hot beverages or watching caffeine intake?

        She, very rarely, asks me to give her a table spoon from espresso shot so she could put it in her cold drinks, which is basically an ice-cream milk shake with loads of chocolate syrup 😂

    Only just had the Peru arrive, going to have to do a delayed order I guess! I still love how I can forget about my coffee needs, order Monday and have it by Thursday though.

    I really love the delayed dispatch option, and I've tried the Peru Chanchamayo Organic SO, and Moments to Memories Blend which were both excellent.

    I'm back to exploring coffee on the chocolate end of the flavour scale, as I've had far too many funky SO's from various suppliers lately, maybe my tastes have changed, but I very rarely end up with a fruity coffee like the Kenyan or Ethiopian Yirgacheffe coffees that got me into SO coffee 10 years ago, and your Peru really was a standout amongst recent orders.

      If you want to go super chocolate then I'd highly recommend our SWP Decaf. I know it's decaf, but the flavour is terrific if you're after strong malt chocolate and cola notes. At present we don't have anything in the Yigacheffe realm, but we have before, so I'm sure we will again. However, we do have a Washed Kenyan which I'd also highly recommend and once our Colombia Cauca Single Origin is back in stock I think you may enjoy that one too :)

    Reason being I have a fully auto machine and can only put one type of beans in it. So when I want a late coffee I use the ground chute to make decaf. Any chance we can still get ground? Thanks 😀

      Right now our industrial grinder is out of commission, hence the lack of pre-ground options. Understand the situation with your equipment. Perhaps you could get a small secondary grinder as a potential solution so you don't run out of the good stuff or use our Half Strength Full Flavour range so each shot has half the caffeine. You're always welcome to email [email protected] with the ground request and if I can find a solution I will :)

      It's been a little while since I've used a Smart grinder, but from memory I think somewhere between the percolator and filter settings way the sweet spot for pour overs using the Smart Grinder :)
