    Isn't that salmon roe? Wouldn't it be misleading to call it caviar as it isn't sturgeon roe.

      The most common caviar is indeed made from sturgeon roe. However, caviar is a commonly used word in the chef/cooking world to designate the process of turning a liquid juice into a juice-filled peal using a spherification technic.

      You can find various types of fruit caviar, especially overseas. But it is not (yet) very common in Australia.

  • This is NOT caviar. This is a chefs 'caviar' which anyone can make via recipes online. You make the mix, cool down some oil, drop the mix into the oil and it makes 'caviar' pearls.

      Caviar is commonly used to designate the sturgeon roe, however there are many other caviars out there. Even in the nature you can find some, like finger limes for example that produce citrus caviar.

      These are homemade fruit caviar and you are pretty much correct on the "how to". However the most complex step of the recipe is the creation of the liquid-mix that will then be turned into a pearl. That mix can require a significant amount of work depending on what you're trying to achieve and what you want to pair it with. For example, our lemon & thyme mix is based on our own recipe that you won't be able to find elsewhere or find the recipe online.
