Hey yeah - currently using the wife's iPad Mini 6 (she wants it back haha) with the Eufy E340 Spotlight, so it's mains powered.
If its a mains powered one, then it'll work. The battery powered ones won't let you steam that long before they turn off to save battery.
Maybe try marketplace for a cheap iPad?
I use a samsung 10" from 2019 - bought in 2019, set to max charge 80% capacity as a baby surveillance monitor. Gets used about 12 hours a day. Zero issues since then.

Settings > Device Care > Battery > vertical 3 dots > Settings > Protect Battery > Tick
And dang thanks for making me check, looks like recent updates (maybe a few years ago) undid this and it was off. I've put it back on again.
And it's now 85% not 80% like it used to be.
Got the blackview 11 for $150 and found it to be pretty decent. Doesn't fast charge but if you leave it plugged in shouldn't be an issue.
Alldocube iplay 50 mini pro for around $180. See are it will develop a touch input issues but it's actually pretty easy to fix with $2 tape and an opener
Lenovo work reliably and are much cheaper than the overpriced Samsung/Apple.
Also you can run an app to use a front camera to only turn on the display when someone is in front of it - saving power and screen lifetime.
Have you tried this with a device already?
If the Eufycam is battery powered, you can't do this.
