Optus is pretty good where im at , and thats through moose !
Is it just one location that you are experiencing this? You might want to try checking a map of mobile towers like ausphonetowers and clicking towers around where you are experiencing issues to see if there is good signal overlap from where you are using your phone and with nearby Optus towers. If it is everywhere, then try checking with someone you know on another provider's network to confirm/eliminate the provider, or try checking if it is your phone causing issues (e.g. 4g/5g band support if your phone was an imported one).
Also is it time of day dependent or occurs throughout the day? If so, it could be there is a high number of Optus/Coles mobile users slamming the tower during peak times and there isn't another tower to communicate with to share the load.

did you factor in time and location in the dropping out equation?
can you try with a different SIM? (say Amaysim with cashback, or Lebara from ColesWorth)
I needed to use a portable 4G hotspot. I’m got a couple of cheap colesmobile data Sims, which were on special, they worked OK , but damn very very slow speed of five Mb/s My normal phone gets about 80 to 100 MBs.
Moved from 12 months Boost after they deleted International calls.
Virtually no internet since
Looking at my phone right now and it's only got one bar. I'm sure it usually has more than that.
