Just wondering if someone can recommend me a flat bar road bike for around the $750 mark. Don't really know much about bikes and wishing to upgrade from my MTB.
I would ideal like one under 10kg with full Shimano 105 if possible I suppose…
I currently have my eye on this one:

There's no such thing as "full Shimano 105" on a hybrid, as 105 is exclusively a road group set, and Shimano don't make any levers for a flat bar that are branded 105. But you can certainly get bikes with a lot more 105 than just the rear derailleur, which is all the bike you linked to has.
But on the plus side it has pretty decent rims and saddle for a bike of that price.
It's also worth noting that the bike you've linked to is a cyclocross bike. The brakes on these are primarily designed to cope with really muddy conditions. If you're looking to to just ride on the road then a bike with direct pull (V-brakes) probably offers stronger braking and is marginally easier to maintain. See discussion of pros and cons here.
