Most Asian recipes derive glutamates from natural sources (eg oyster sauce, fish sauce). If you find you need more umami flavour then you can add MSG (compromise needing lots of water afterwards).

I moved from the city to a country area an hour away and all we have around here is that crappy Aussie Chinese takeaway options. I miss Box Hill or Glen Waverley.
It’s sad that takeaway restaurants lose authenticity. I think if you put a decent Xi’an / Shaanxi style noodles, kung pao chicken / mapo tofu or something, even a toned down Chongqing hot pot in front of an average white aussie (like me), they’d love it way more than sloppy tasteless chicken with cashew nuts or overly sweet honey chicken.
I still want someone to open a dumpling / bao food van or cart in the morning. When i visited China, i remember the little old ladies making and selling hot dumplings and bao on the street in the mornings, we had that and vegetable noodle soup for breakfast every day. Beats the hell out of any cereal or muesli. My kids love when i make it for brekky, we just need people to start selling it in the street.

(Then again the all you can eat buffets usually have a tray of chips that always goes quickly, smart owners since it's cheap to make I suppose :) )
I just read a review that said they had to convert measurements from ponds to kilos. I'd have to find out how much food is in a pond to begin with but then, I don't have time for conversion maths.
