Looking at the recent portable monitor deals from Aliexpress, I am wondering which screen would be good for clear text between 14" to 16"?
Eventually I will seek to pair it with a small light business windows laptop for travel under $2000 - any recommendations on that as well.

I don't know about the montios, I guess a high PPI like a 3k OLED would be good for reading.
For travel laptops, I love 2 in 1 devices. I'm rocking an old Lenovo x1 gen 2 with OLED 14" screen, when travelling can turn it into tent mode or flip the screen around to watch a movie.

There are apps on IOS which are designed to let an ipad become a second monitor. Also if you have a second older laptop windows has it baked in ( https://techcommunity.microsoft.com/t5/core-infrastructure-a… ). I did both all the time when I was doing IT stuff on the road. Ipads generally have a great battery life compared to monitors, and most households have an old device or two kicking around.
