Kitchen knives and sharpener

Howdy y'all

Looking to buy a knife set as a wedding present. I was given the Global Isaku set a couple of years ago and am very happy with it (you do need to get a good sharpener though - I got the Minosharp one after the knives got a bit dull).

SO: what knives / knife set / sharpener should I buy (and from where?). The guys I'm buying for would do a lot of veges, not so much carving. Not so concerned about a knife block (apparently they have a magnetic strip thing already).

  • I have the Global Millenium set, and apparently the Ikasu one is a bit of a pain when you lift it up (the clear plastic sliders fall out. I suppose you could just glue the sliders into place). Anyway, the knife set is pretty good, and I have the water sharpener, too. I've also got a Wusthoff chef's knife which is excellent, but they're a bit more expensive, yeah. I shy away from brands like Scanpan/Jamie Oliver/Mundial because they just seem a little unreliable. I'd rather trust a well established, well known brand like Global/Wusthoff. I'd also hang around a little, if you can, as the Global block sometimes comes down to about 300, so you might get lucky. Either way, I think that's probably the best price point between quality/endurance/affordability.

    Knives are a personal purchase I reckon…
    They've got to feel right in the hand of the user.

    I have a Furi set which are sharp, lightweight and well balanced. Of a similar nature to the Japanese style.
    I find the European style too heavy/clumsy.

    Who knows what your wedding friends might prefer!

  • Alizzan - cheers, I have the Ikasu one, no problems with the stand (maybe some are dodgey?). Thanks for the heads up on Wusthoff - I haven't used them before, will need to check them out. Not sure if the Wusthoff set you've linked makes sense for mainly vego cooking (I've found carving knives not so useful if you aren't carving). Combine that with my personal belief that bread knives are a waste of money because cheap arse ones do just as good a job (same goes for cleavers) and it starts to look less goodish (ie: cooks knife and maybe paring knife is useful, carving knife not so useful, plus a bread knife).

    Agree Scubacoles - based on their current kitchen gear, the bloke will want heavy and dangerous, the missus will want global style light weight. Think I'll try to go with the ladies choice.

  • MrDixit - All good. TBH, I missed the part about vegetarian cooking; I really should read more next time. If that's the case, you're probably better off just getting 2-3 knives separately. I would highly recommend Wusthoff, and you can get the single piece (similar to the Globals) which is a bit lighter. My brother has a set, and they're still razor sharp. Do you think they'll take care of them? There's no real point buying a really good set if they're going to leave them out overnight with food on them or cut lemons with them without washing the blade afterwards.

  • Yeah, they'll take care of them. I'll take a look at Wusthoff individual knives. Need to get to a physical shop and swing them round a bit.

  • OK, thanks y'all. Ended up going with Global Ikasu for $350 + approx $11.85 shipping. Really prompt service (I emailed them to say that I couldn't place an order, fixed within 5 mins!)
