Graphics cards being released these days seem very expensive to me, and I'm having a hard time finding a good value option around the $500 mark.

No reason to get a modern release card. Go for a 3060Ti, or a used 3070 for the best bang for buck at that price point
What would you recommend for those of us in 1080Ti gang? Keep holding?
Depends on the rest of your system - if you're running an 8 series Intel or later then I'd upgrade just the GPU and you'll be golden.
Anything older then I'd keep the 1080 in place as a media PC or NAS, or something for the kids, then go for a whole new build - to take advantage of things like resizable BAR, DirectStorage etc that weren't an option on older systems. It's more expensive though…
Intel i9 7900X … New build is probably the way… I was holding out for a new HEDT platform, but AMD decided to add an extra zero to the price… and intel is MIA. :( The thing just won't die!!
What are you intending to use the card for? AAA games? Content creation? AI? CUDA/compute?
Generally speaking, there are no good value graphic cards
For a new card, the only consistent deals are stacking gift cards on coupons - subscribe to this tag
For a used card, you are rolling the dice on whether the card has been used for mining or other life shortening purposes

We got 2 of these, no problems, very happy 12 months warranty.
unfortunately still 3060ti, they performance almost on par to a 3070/4060ti, and happen to be $500 thereabout.
no DLSS3 though.
The $500 price bracket is not a good one. Either stretch your budget to a 7800xt or 4070 or get a used card.
