All of the 8000g series are 65tdp so should be easy enough to cool with something low profile or single fan water coolant for your small itx build. A620 is more than sufficient for itx. I bought a z790 itx but for what I wanted it was a silly decision as the heat required to generate the CPU could not actively be cooled by air in a small chassis.
Really depends what cooler you are using and how cooling constrained your case is. I keep consistently sub 80 degree under load with a 105w 3900x in a CM Nr200 with a Noctua L12 on it. 65w definitely does make life easier though.
I have a 13600kf.. please don't buy Intel K series if you want to air cool. Liquid cooling is a must if you want Intel in a mini itx.. I had to go large itx to fit an air cooler
