The Anniversary edition of Skyrim is not necessary. The exe is the same as SE; it just has some Creation Club files which are poorly integrated into the game and that as treated the same as Nexus mods (no DRM checks, etc).

A good, but advanced modding guide, is Lexy's: https://lexyslotd.com/ . I strongly recommend buying Bethesda RPGs rather than renting or pir8ing due to moddability.
