I think Gong Cha is the best chain in Australia, although I do rate BubbleCup in Melbourne. It entirely depends on your preferred flavours and toppings as to what chain you think is best.
any thoughts on the following chatime bubble tea order:

25% sugar

There's heaps in and around Southern Cross that i've tried and none really stand above another that i can recall, but also not a connoisseur and I drink to enjoy and not critique. Usually i just go back to Chatime purely for the points

Do people actually buy that stuff and consume it? I always thought those shops were fronts for money laundering operations.
Its a pretty lucrative business in itself, if you are in the right location.
From what my friends sayin in china there is a few extremely popular ones that you need to queue to queue, queue to order, then queue to take your order. The daily sales of ~100,000.
Drinks are one of the most profitable businesses, or why would there be so many bars and cafes around. Those energy drinks, milk shakes, soft drinks account for a large % of sales in colesworth

Coincidentally enough also a common business type that underpays/doesn't pay workers, and rely on visa scams.

not in WA. all 3 stores have now closed down.
i thought it was okay, their specialty is brown sugar milk tea, which is probably 1 of the easier ones to nail and perfect…. but i felt gongcha's one was slightly better

Missing quite a few chains OP (didn't realise there's so many now!)
I do like Tea Royale and Milksha, feel their ingredients are better than some of the nasty cheap stuff used by ChaTime and BubbleCup perhaps.
There's a new store/chain that just opened recently in Melbourne CBD (name slips me) which is highly rated also.
I've added Milksha and The Alleyway as they are more accessible in AU
Mixue's prices are a bargain, but my favourite for taste would probably be Teaspot.
I've found all their flavours really bland and quite lacklustre, even considering the low price! Have tried at least 4 different items. The shake-shakes have been the most disappointing, while the brown sugar pearl sundae was decent.
Coco and Gongcha but lately they removed the roasted milk tea. find me roasted milk tea!
I'm not a big bubble tea person, but i've still had a few in my days.

Accidentally voted Gotcha in the poll, oops. My real vote goes to Gongcha, followed by Machi Machi.
Gongcha for the earl grey milk tea. The pearls are better elsewhere though.

I like Chatime or Sharetea for bubble tea, but this is likely just because they are everywhere I frequent. Milk Flower has delicious mango dessert type drinks.
Tea Shop Express at Town Hall Station Sydney makes their drinks with real and fresh tea and it's a huge hit with the community, and they do a deal that's something like any 2 drinks with 1 topping each for $13. You can really taste the tea flavour instead of an artificial fruit/milk taste. Very good selection of unique options in their menu too, and for (almost) every drink there's the choice of having it with a tea base, as milk tea (no dairy), or tea latte (real milk).
Contrary to the 'Express' name, it is not express at all, the shop is hugely popular and there are crazy lines all the time

Not sure it is a chain but the Heeretea at Knox (Melbourne) has the best Brown Sugar Creme Brulee, and my partner reckons their Lemon is the best.
Bubble tea tried it once overrated in my opinion but guess the quality varies maybe the one i had was rubbish.

ChiCha is hands down the best, no contest — they actually brew the tea per order in front of you (which explains the super slow serving times).
I rate Costco's frozen bubble tea.
