That's pretty normal. Even the expensive brands just use a neutral oil like canola or soy. You could use EVOO instead, but it would taste bitter.
I looked at every bottle in IGA the other day and they all had either vegetable oil, canola oil, or sunflower oil listed.
Apparently avocado oil is the go to for a healthier choice. If going for olive oil it needs to be light and preferably limited to a blend with another oil to avoid the bitterness as mentioned. The molecules tear apart in the mixing process which creates the bitter taste.
Scientifically the concept of mayo is pretty interesting … the lecithin content of the egg yolk acts as an emulsifier to bind the oil content with the water content (which would naturally be repelled from each other).
