It helps to provide examples of which ones you cannot subscribe to.
You probably just need to use TWAM and ask them to update tag to allow subscription.
Musical Instrument has been updated to a 'Product Category' Tag, so you should be able to subscribe to it now.
Only admin can explain it. I find I was the first person to subscribed to some tags. In other words, tag subscribing is not frequently used by members.

You can subscribe to Brand, Products and search items.
You can subscribe (Create Alert) to the 'Musical Instruments' search, or if there was a brand or product associated, you can.
As for why you can subscribe to some, take Dyson. If you go to the /tag/dyson, it'll redirect you to /brand/dyson where you can subscribe.

Specifically to tags, subscription is available for the tags which are designated a Product Category, a Brand or a Product. You should be able to see the designation if you search in the tags page. The reason to not extend subscription to all tags is for server performance reasons.
For example, https://www.ozbargain.com.au/search/tag/asus — You can subscribe to the "ASUS" Brand, or the "ASUS 4G-AX56" Product, but you cannot subscribe to "Asus - XG32VQ". Tag designation is a manual process performed by the Mod Team, as you can read from RichardL's comment about the "Musical Instrument" tag.
