In Syd here they have it in some RSL places, they don't have much sushi for you but it's buffet.

China Bar Buffet has a sushi bar. For lunch (usually $29 per person) there is all you can eat sushi + a range of other Chinese dishes. For dinner, it's sushi and sashimi, but the crabs, oysters, prawns etc bumps the price up to about $60 per person (and with that price you can eat good sushi just about anywhere until you are full).
Personally, I think it might be worth just going to a sushi train place or ordering a sushi platter rather than all you can eat, but that's just my opinion.
Sakura kaiten on little collins street. Quite expensive though but very delicious.
Otherwise, if you are after cheap places, the one in Melbourne central or the one on swanston street should be OK, although the variety is not that great or special.
Sorry but none of those places above have all you can eat option.
