I have a little shy of 500,000 Amex points (My wife & I have an Amex Explorer each). I've looked at transferring them to Asia Miles/ KrisFlyer, but with effectively no European Flights available to be redeemed with points - for what seems to be the foreseeable future - I'm wondering if I should just redeem them for $2,500 with Amex. What do you guys think?

This is not really true and there are many other destinations in the world, but honestly if you don't want to put in the effort required for booking award flights just take the cash.
What do you mean no European flights? I'm on Singapore Krisflyer and Qatar's Avios redemption site and there are plenty.
Singapore airlines have amazing European flight availability. Not sure what you are on about

I try to usually just redeem my Amex MR points to pay off charges on the credit card. Conversion rate isn’t great but if not really travelling, quicker and easier than buying gift cards. Sometimes AMEX will have a 30% bonus on MR points when paying of charges, ( well at least they used too ) which would make it worth even more if you can snag that offer.
I’ve been using it to just pay off charges. Could do gift cards too but didn’t really fancy having to using multiple $100 cards (fairly sure that’s still the biggest denomination)
Edit: I see $500 is available. I’d just Chuck it on a gc then
