I was wondering, if we use Qantas Points to get a flight ticket and only use the CC to pay for the tax portion, would there be complimentary travel insurance included in that trip?

It's free anyway with many credit cards, even if you don't pay with the card.

Commbank and Bankwest cards are the only cards I know of that provide travel insurance for the virtue of just having the card and don't pay anything from the card. From that, Commbank requires you to activate the insurance via the app before you fly.
Some AMEX cards even go into length specifying that the tax component that must be paid from the card.As @djkelly69 says some cards you can book anything related to travel above a particular $x value. e.g. From memory, some ANZ cards >$250 on any travel-related pre-booking (acomm/car hire etc.).
But @jv is correct OP should read T&Cs, or at least name the exact card type and Bank.

My ANZ and St George only require $500 of travel related expenses to be made on the card prior to departure (incl accomodation, activities, rental cars etc)My Suncorp card needs the flights to be obtained using the credit card, "but not taxes or airport or travel agent charges" which could mean point flights are excluded as you are essentially only paying for taxes

In the PDS, it states ' if the entire payment for the trip was charged to the cardholder's card prior to the commencement of the trip'.
So does that mean it's a no, if you use points?
Can anyone please list out the CC that covers your domestic/international travel even if you use QFF points? Would like to look into those kind of cards.
Depends on the CC. Some only require $xx to be spent on the card to enable the insurance, some don't require any spend, some require the whole travel amount to be spent on the card, some require the points used to have come from the card.
