The technical details of RAM get really involved if you care to go that deep, but for most people (average users, not full on gamers/power users etc) whatever will be fine.
The answer is also "it depends" to an extent, e.g. DDR4 vs DDR5 have different numbers for "good" because they're different technology, and which factor matters to you depends on what you're doing (different games/apps care about different factors).

But there aren't much options in 2x32GB for fast ram. Seems like the faster kits are 2x16
From looking at some benchmarks, you'll get ~8% more fps by going 6000 CL30
Yeah, 64GB sets of RAM with that speed seems to be pretty expensive. According to the previous post with this ram, it is supposedly overclockable to run at 6000Mhz at CL36.
I needed white RGB sticks for my build so I ended up buying 2x16 6400 CL36 for ~$208. May need to downclock it to 6000

I'll admit, when it comes to RAM, I don't know what "good" timings are, opposed to "bad" or not great timings. I read comments across the internet saying different things, and I find it quite confusing.
