  • No water circulation. Just wondering how even the cooking temperature would be for Sous Vide(ing?)

      I actually have one of these, I picked it up with flybuys a couple of years ago. Consider that water circulation is just a different way of achieving the same result, which is usually more practical than in this instance. It's easier to dump a water circulator in different sized containers if you're in a commercial kitchen, they can be easier to store etc. These use a heating coil and a thermometer, a basic yet effective solution that will give you the same result in the sort of portions you'll be dealing with in home cooking.

      I have one suggestion regarding the pot. It's preferable if the pot is not overcrowded, but as long as you use the included rack, it should work fine. I tried it once with 3 porterhouse steaks and 2 big T-bone steaks (around 700g each). I cooked them at 54°C for 2 hours, but some steaks turned out slightly undercooked.
