    • I am getting confused, some research says cooking in aluminium is not good, some says cast iron is not good ( because it gets rusted over the time).. that only leaves option of stainless steel !?

        Not to start a massive debate… But…

        It's entirely up to you what you use. If you mean teflon/aluminium I'm pretty sure most manufacturers haven't used PFOA in manufacturing since about 2013.

        I've used all of it and in my opinion cast iron cooks and tastes better. It's easy to maintain, once finished just wipe it with paper towel and bang it back on the stove.
        Worst case if you do have to rinse it, I use a small bamboo brush to get off the chunks so it doesn't go rancid.
        I only cook with olive oil or peanut oil so a "re-season and rust prevention" is splash some of that in the pan/pot heat it up then wipe it with paper towel and bang it back on the stove.
        Some people recommend flaxseed oil but … smells funky and olive oil is half price all the time.

        Negative about cast iron is it's porous so if you cook some funky fish dish the night before you might have tainted bacon & eggs the next morning.

        Enter stainless steel or non stick with a thick base.

        If you cook funky things, I usually do it in a non stick pan. I'm pretty hard with them on cleaning and go through about 1 a year.

        I never had joy with a stainless steel pan, they would always burn fried eggs/bacon/fish for e.g. no matter what temp or what oil or butter used. They would just stick. Could be my lack of cooking skills but they've all since been violently recycled by otto.

        Ceramic cookware is another option but I recommend the above for various reasons.

            @DaveD: Maybe grab some globals if you can. the good / bad thing about global is they sharpen well but blunt well.

            I was smashing crab with one tonight and honeing every 30 seconds. But they keep the edge. Honed on ceramic rod or even the wheels but its even 30 miniutes

  • I have purchased 2 sets of these over a span of 5 years, all of which ended up in the bin. I recently bought the Essteele stainless steel Per Vita set, and I wish I had known about stainless steel when I was looking to buy pans. They are very easy to clean and cook with, just watch a couple of YouTube videos. I'd steer clear of any non-stick pans, regardless of the brand, as they will all end up in the bin after a couple of years.

      • A good Stainless steel set would last a lifetime. These non-stick sets are disposable and have to be replaced every 2-3 years.
