A bit late, but I am about to play the Persona game series in Switch since the release of P3,P4 and P5Royal.
I know P5 has great reviews, but should I start with P3 first and move my way up to P5?
Also, which one is your most favourite?

Don't start with P3, it's pretty dated at this point. Either P4G or P5R are both great experiences - play the one that sounds more interesting. If you've played both P4G and P5R and you're hankering for another hundred hours while you wait for P6, go with P3 at that point.
The social side of P5R takes place in metropolitan Japan (Tokyo, think bars, baseball, arcades, public baths, etc) while P4G takes place in a rural Japanese town (think onsens, malls, temples, etc). A third of the game is really about the locations you're visiting and the experiences they create so it's a meaningful difference.
P4G is also a bit less "adult" in its themes. While the kids are the same age, P4G is a bit more like being a fifteen year-old while P5R is more like being seventeen. The personas are depicted equally as raw in both (sexual themes, anxiety, love, lust, etc) but the issues your social circle are working through are a bit heavier in P5R.
They're both great games.
I'd actually go back to both Persona 2 games - Eternal Punishment and Innocent Sin.
They're quite creepy yet captivating games, especially for their time.
Only problem is is that you'll need to use an emulator on PC to play them as EP was never released in PAL territories and IC was only released on PSP in Europe back in 2011.
Don't bother with 3 just yet since there's rumours of a remake. Start with 5 since it has the best QoL features. If you like it then move onto 4.
imo p3 pretty skippable…
p4 golden - my absolute fav of all time, literally one of my most fondly remembered games of all time.
p5 - not bad..didnt have the charm of p4 golden imo
