I have only played Bloodborne. Its why I started therapy
Sekiro is quite different to Souls.
It’s just as difficult but in a different way.
If you’re after an easy to pick and play game then RE8 is the way to go
It still requires a deep understanding of game mechanics and good reaction times etc to get the most out of it - like a souls game.
Resident evil tho be like:

I'm going to go against the fray and suggest Sekiro.
This game really reminds me of Ninja Gaiden on the original Xbox, which was one of my favourite games of all time. It's a genre of game that has a good mix of RPG-like elements (e.g. different weapons, power-ups, items…etc.), but also a fun hack-and-slash style, with a good dose of problem solving, exploration and adventure.
Sekiro has certain horror elements (as did most Ninja games previously), but it's not a horror game in the sense that "being scary" is not the selling point of the game.
Resident Evil is better if you actually enjoy the horror genre (I generally don't), and it's more of a traditional action-adventure with horror elements overlayed. I haven't played it, so can't offer more insight, but in general, the series doesn't interest me that much.
There's also the "Japanese inspired" element of Sekiro that I find particularly enjoyable too.
I remember when i had to choose between Dead space or mass effect for my Christmas present in 2006.

It depends if you want a relaxing holiday and a working controller at the end of your leave. If you don't care Sekiro. If you still want you're sainity and a working controller get RE
If you enjoy a challenging game, Sekiro.
