I was just in Central America and used Airalo which was really good.
Buy and install the sim from the app before you leave, activate it once you arrive land and it should work like magic.
I think they usually are on the cheaper networks so your coverage may vary depending on country.
Haven't used an eSim there as we just bought one from a shop in each country we visited.
