I have read many many times that buying a vending machine and restocking it can be a good way of generating some extra income, even now. I guess it because there will always be people willing to pay for convenience. My question is…what’s the equivalent business model in the online world?

Yes, but this convenience already exists in the online world / it is very difficult to beat. Unless you are intending to beat Prime next day shipping, you can't exactly say that you are offering convenience over existing options.
