Just curious about what happens if I purchase a flex flight for my first flight and then starter on the return. Can I cancel that single leg on the outgoing flight and keep the return flight?
Fare rules don't seem to exclude it but would assume they would lump everything into one
Yes, but is it a single ticket? They have different fare rules and different cancellation policies so you would expect they are separate.
A single ticket can have multiple flights, each with different conditions. This is quite common.
If you cancel a flex leg then you will get a voucher for that leg. That leg will disappear from your booking and the only thing that will be left on your booking will be your return leg.

Brother tried this recently.
If you cancel any part of the ticket the entire booking is cancelled.
If it is all on the same ticket, then cancelling the first flight, or not boarding the first flight, will cancel all following flights on the same ticket.
