The i3 is an amazing chip, you don't have to shell out for an i7 to get good performance, it will do HD video well.

As for MATLAB, that is like saying you need to do some work in Windows. If you are doing the odd plot then it hardly matters, if you are using it to simulate a part of a live control loop then this is another world. If you don't know what you are doing you will probably be fine.

As an asside, MATLAB has a feature where you can have all the processing done on a server/desktop and then just use your laptop as an interface.

  • If its just for movies and Word then even an old dual core or celeron processor will be enough (they're cheap to boot). But MATLAB is an other story, it really depends on what you do on it. If its just a few graphs, ANOVA's or interaction diagrams for school then you're fine but dont expect simulations to go very speedily.
The sandy bridge dual-core celeron in the one below should work you wonders.
