generally its almost instantly, (including in those cases where the cashier hits CASH, instead of EFTPOS).
It may be delayed in some extremally rare cases, (like when System goes down, I have worked at a retailer in past who used to sell apple gift cards, and quite often on some particular weeks, we'd have this glitch where the cards wont activate, and we had to call manager's to do a refund on them, sometimes the customer may chose to try with another gift card before this refund offer, other times this second try would fail to activate as well).
Bottom line is its only really delayed if either the retailer where you bought it from - their system goes down
or the card issuer's network is down
or link between retailer and card issuer is down.If that's the case you'd most probably know it at the time of purchase itself.

At Coles after you pay watch the payment pin pad. It will activate the card and display approved.
… Why not just wait and see? Try using after a day, and if it hasn't activated yet, then it hasn't activated yet.
