I already have Adobe Acrobat Pro through my school subscription but find it really unstable on my Mac with constant freezing and crashing an issue. I'm wondering what other software is available for free.

Not sure what you're after, but you can just create a PDF from anything that prints, and then sign it in Preview.
There are other Web based online only products, but they have limitations. I would DM you, but it's not available on your profile. :)
Adobe InDesign is probably the best. Or Illustrator, or use both. You can get it for free if you look hard enough, or so the legends say…
Check if your school subscription includes the entire Adobe CC, you might already have InDesign.
