I work in the manufacturing industry making building structures. I work 9 hours a day but only get 1 x 15 mins break and 1 x 30 mins lunch break. I am entitled to an additional 15 mins break- totalling one hour break daily?

According to the Manufacturing and Associated Industries and Occupations Award 2020, an employee must not be required to work for more than 5 hours without an unpaid meal break of a minimum of 20 minutes with some exceptions (Point 18 - Manufacturing Award).
If that's not the Award you're working under, do a search for the correct one on the Fair Work Ombudsman website.
If that award applies. OP could be under the Timber Industry Award or another award or an EBA.

1 paid 15-20 min break is fairly standard in the industry.
And when you say 9 hours, is that all work time or is that inclusive of your breaks?
In any case…Would be very unlikely to see many work places give you 2 of smoko breaks. At best you may be able to negotiate 2 10 min breaks spread over the day, but in that scenario you can bet your bottom dollar that supervisors will be watching the clock when you go on break.
Better off just leaving it as is and taking a long toilet break like most other people do 😂
Just become a smoker. They seem to take a 15 minute break every hour and no one says much. Plus you'll get to use your sick leave more often too.

2 15s and a 30 is pretty standard, my work does 2 10s and a 40. Like the poster says above just tell em you a smoker
What does the award say for what covers you?
Do you get paid overtime as 8.25*5=41.25hrs for a 5 day week?

Is that 9 hours with a monthly RDO or a leave early every Friday set up?

My working hours are 6:30 to 4pm, this includes a 30mins lunch and 15mins break. As for award it is

juts take an extra 30 mins toilet break at your leisure time in the bathroom.
