    A way to push freshness testing is to simply steam the crab. This brings out the natural taste and smell of the crab.

    If in doubt, add ginger slices or shreds and optional cooking wine for assurance.

    Of course, it is perfectly fine if one prefer much stronger seasoning and flavours.

        More humane to kill it first by putting in freezer to put into sleep state then ripping it apart

        Best to kill it first.

        Not only it is an ethical pratice (for many people), but it also practically prevent the crab vigorously move its limbs to the point the limbs deattach from the body.

        I typically remove all the unedible parts e.g. gills, guts, etc. as quickly as I can before steaming. The longer you wait the less tasty it is.

        Please excuse me not describing how to kill a crab. Don't want to push somebody's button.

    • they are good, tried both grade C and grade A. Grade A is good quality and grade C is not bad as well.

    • Grade A are the best ones usually $60-70/kg from memory but depending on place, season and market

  • I've fought mudcrabs more fearsome than these

  • YMMV but I’ve bought crabs from here before and wasn’t totally impressed with the quality/freshness. Maybe I just scored a bad batch.

    Delivery etc was prompt and good.

    • You are correct. I have as well they are not grade A. Have had better.

      How does one determine the grade anyways?

      • Give them an IQ test

      • For a start, you check to see they have 2 full size claws. The males have bigger claws then females.

        Crabs with 1 or no claws are virtually worthless in the restaurant trade. To the extent that last time I was in north Queensland, the pro fishermen threw the no claw ones back in the river as they were only getting $1 or $2 each for them.
