This won't be for everyone but if anyone is looking for a steel one step up from Vg10, it would have to be SG2.

Did a quick search and at this price it is the cheapest SG2 steel knife made in Japan.

    Apparently these knives are super durable, very hard, and don't need sharpening very often.

    But even $210 seems steep for a generic numbskull like myself.

      Don't think a knife can be both hard and super durable simultaneously: high hardness = longer lasting edge, but more prone to chipping iirc

        Also grain size of the steel makes a difference. So finer grain steel that's hard tends to keep its edge better.

        Everything you said is true, but you shouldn't be chopping frozen or bone with these kind of steels. Only other way chips will occur if you knock them against hard things

    • I don't have this knife, I have the yaxell mon which is vg10.

      But, I would not hesitate spending the $ again on something quality. The Mon, which is not as good as the knife in the OP, has been used daily in my house for months and I've never sharpened it because I simply havent needed to - it's still razor sharp

      Maybe, but you can get VG10 for less than half the price and it is still an excellent blade

        Where? Last I saw the going price for Vg10 20-21cm knife is $130~

  • how does this compare to a Shun Premier @KnifeEnthusiastBoii?

    • The shun premier is a Vg10 based steel (even though it says VGMax, as far as I have read there's little to no difference.) the premier also has a 62 layers, so the low down is if both are the same price, I would take the SG2 yaxell.

      More layers doesn't make it better necessarily, but the yaxell has better steel and more workmanship put into it, if that counts as value to you
