$2,700 is a joke!
I pay my cleaner $25 an hour. She comes for two hours a week and cleans my whole house.
52 weeks in a year x $50 a week = $2600.
You would hope that the vac lasts longer than a year of course but it isn't going to clean your bathrooms. kitchen and change your bedsheets for you.
$25 an hour seems pretty low?
It's cash straight in her pocket, I don't go through an agency.
Can guarantee cleaners working through an agency don't get $25 an hour.

I’d rather prefer Dreame W10, currently on sale for $1299 ($800aud equivalent in China, the S7 MaxV Ultra is $1000 equivalent in China, that’s 2.5 times more!!!)
W10 has clean/soil water tanks, but no dust bin, and rotary mops do a much better job than vibration mops too!
I gotta say that machine looks pretty amazing! I wish the S7 had fast charging. I thought (and still think) that $1000 was a bit much, especially when the first Xiaomi was regularly $330.
Waiting for it to fall to the same price as the Ecovacs Deebot X1 $2.5k…

Can't say I get a good vibe from Roborock's marketing in Australia. First the May Mayhem sale giving the jaw-dropping price of RRP with free Australia Post shipping.
Now the "Almost SOLD OUT" thing - No idea why would you bother going to the trouble of crafting a marketing email if it's almost sold out after a few days. Email those in your database when sales slow.
make sure you dont get fooled by those FOMO message.
S7 is more than double the price of S5 max, while not providing significantly upgrade apart from the dock. (which cost extra half of the machine)
The Ultra pack is priced also more than double the price in Chinese market.
I think Roborock forget their market proposition which made them successful.
As a comparison, You can buy a smart phone with the price of the dock along.
Waiting for this to go on sale or deal, overpriced, 1 year warranty is a bad choice from them also.

Bought the lone S7 MaxV with the thinking I'll consider a dock after using for a while.
But:
Empty part: I sort of like emptying a small, clear canister - I last minute save anything of importance whereas a full bag I'd conclude too much hassle to check.
Mop cleaning part: S7 seems to spot drip wet the middle of the mop, so the outsides become dry. Ultra would help here, but I just wet the floor a little to rejuvenate it during action. Plus toss some floor cleaner down while I'm at it without concern it's too aggressive to go through the machine.
As I have two floors, it would be too much hassle to transport the dock as well, so I'd require two complete systems for total handsoff action.
So to me, Ultra dock by itself would have to be around $300 to contemplate buying it - just to save mid floor mop pad rinses.
Or < $1750 with the S7 MaxV.
