Looking for the best option to replace broadband, I have noticed some networks have stopped allowing you to use mobile Sims for this, or have capped hotspots etc. What would be the best option I am looking at around 100gb/month or more.

I don't want broadband, I just want a mobile wifi/ sim.
Then you want a mobile phone data plan that you have to use a mobile with. They all have this available and no strings attached to these plans as they work with any mobile if the mobile supports the bands for the mobile network you pick.
The vast majority of mobile phone data plan's are NOT for use in a 4G or 5G modem as these are classified as a broadband connection by the three mobile networks.
Aware, just looking for the best plans available, also some of them have caps on using hotspot etc e.g 10gb/month and some don't allow use in wifi modems
@alex123711: I'm sure Vodafone only have caps for hotspotting, the rest don't well I've tried both Telstra and Optus using their mobile plans with data in a 4G modem with no issues anyway same here with no nbn, all my connections are either 4G or 5G Mobile or pure data plans
Do you care about speed like for gaming? Just yourself using the data?

Felix, Vodafone, Telstra and Optus all offer 100GB+ or unlimited plans. I've used all of them before and would get either Vodafone/Felix or Telstra. Here in Point Cook VIC Optus is noticeably slower.
Felix have a list of approved devices, and none of them are what the OP intends to use (a mobile router)
A lot of the times the terms are never enforced, so nothing ventured nothing gained.

I think optus is one of the ones that only let you hotspot a certain amount, 15gb?
Even if that's the case for their mobile plans that include calls & txt , this plan is mobile data only, and is exempt of any such rules. I have this exact one.

Optus don't have a cap. I'm on the $65 500GB plan and hotspot most of it.
The good thing with Optus is you also get 5G, if it is available in your area.

I use Felix in a Redmi note 5 mobile fone I use it hotspot with at least 15 devices connected most of the time I've never used it for voice call just data no problems 8 months so far
What the service/ speed like?
I'm 500mtrs from the tower so I usually max 20mb download and 10 to 15 upload As most of devices are WiFi Cameras
But never have any problems in peak times
