Anyone Cooked with Tempeh before?

Cooked tempeh for the first time today. Did it as per https://minimalistbaker.com/marinated-peanut-tempeh-7-ingred…

I was deeply disappointed.

Anyone ever cooked with it before? Happy to give it the benefit of the doubt. Otherwise will stick to meat products 😬

The best (and only) way to have it is by shallow frying it and then salting it. Also look up recipes for tempeh goreng.

    • Shallow frying crunch it up a bit?

Do you steam first to get rid of bitterness??

Don’t need to steam, just shallow fry in neutral oil until golden brown. The salt will help with the bitterness

  • Isn't tempeh just another word for tofu?

No more than bargain hunter is another word for tight arse

        So that’s a yes then…

      No.

Tempeh is fermented compressed soy beans.

      Tofu is quite different

    I've been tempehed to.

Seriously though I don't find it great, you are better off making nice meat free meals, then some half baked "kinda meat replacement but pretty terrible" style product.

It's actually a staple in Indonesian cuisine and similar to our use of potatoes

  • I've never liked the stuff generally but have eaten plenty of "tempeh bacon" BLTs that tasted great. I think, even more than tofu, the secret is in saturating with flavour. Think of it as a mostly flavourless substrate for carrying the flavours you choose to put in - the thinner the slices and the more the flavours (and oil) the better it's gonna work for that.

Personally I don't like the texture unless it is cut thinly and fried with or without a coating.

Slice the tempeh about 1 cm and soaked it with salted water hours before you shallow fry it.
You can also diced the tempeh like cubes and stir fry it with garlic shallots, chilli , sweet soy and bit of soy sauce.

Marinating in balsamic vinegar before shallow frying and throwing it in a salad is superb 🤌

First of all, buy the brand that makes nice tempeh. If you're in Sydney, the best would be "Y Tempeh" (formerly "Tempeku"). You can buy it from most Indonesian groceries in Kogarah, Kingsford, etc. You can contact them on Facebook to find out their stockist.

For simplest cooking, thinly slice in square / rectangle, score halfway and marinate in mix of water, salt, pepper, garlic paste & coriander ground min 1 hour. Shallow fry to your liking, either soft in the inside but crispy outside or completely crispy.

There are many other ways to cook it, you should Google Indonesian recipes.

Btw, yes you'll find bitter or strong smell in tempeh from certain brands. And don't buy the pre marinated ones as it lost its texture already. Hope this help.
