I just smashed my TCL Plex. Everything about phone was great apart from the camera.
I don't game etc so if my number one priority was camera performance what would be the best <$300 phone?

I have some great cameras already but they're not always on me. Thus, what phone has the best camera in the $300 range.

If your number one priority was the camera then you'd spend over $1,000 and get the iPhone Pro or the Android equivalent.

If camera is your number one priority then that's what it costs. The top Samsungs cost just as much or even more. Though OP could get a $300 phone and a dedicated camera for less.
I think you missed the point?
- My budget is $300ish for a replacement phone
- most phones in this range will easily perform the tasks I require
- may as well get the one with the best camera

A used Pixel 4A or if you are lucky, a used Pixel 5

Pixel 3 hands down. What a fantastic camera that thing had when it was new. It was a massive upgrade from my previous phone (Nexus 5X). Even today it holds up exceptionally well and IMO it outperforms the iPhone 8, it's iOS equivalent, with its wide-angle selfie lense and, what I feel, was a better portrait mode.
I reckon Redmi Note 10/11 Pro or even the Poco's. Remember it has a decent camera but it wouldn't be fair to expect phenomenal quality at this price range.
