How much dose do the cafes generally use for the espresso shots in cappuccino?

Hey Guys, I was just wondering how much coffee beans/dose the cafes usually use in their recipes.

For example:

a. Small Cap (what is the dose in, yield out, and quantity of milk?)

b. Regular Cap (what is the dose in, yield out, and quantity of milk?)

c. Large Cap (what is the dose in, yield out, and milk quantity?)

    Considering cup sizes aren't a standard, not sure how you'd get a standardised value..

    But….

    7 grams of grind is the "standard" amount of coffee used in a single shot. Often cafes will put more than one shot in the larger sized cups - but there are no real standards from there

    There isn’t a single answer to this. Around 18g per shot would be my estimate. Plus milk as required.

    Edit: seems like the 18g I see the fancy barista place weigh before each coffee is for a double shot.

    Its around 18 - 21 grams for a double shot.

  • Depends on the cafe and how the person wanting the coffee done as it varies to buggery.

    small cap 1 shot, regular 2 shots and large 3 shots, every now and then I get stung by a place that does a 2-shot large and have to deal with piss weak coffee though.

      I went to a new place around the corner that opened last year and their large size was like a half way between a small & medium of of the other cafes in the suburb. So even though there are small, medium & large they are not equal.

  • To be honest, I think most would provided 15-20ml of liquid and then just make up the rest with milk.
    Some stores may put a bit extra in for a large, however generally it's why most taste so milky.

    • Yeah sometimes regular or Med seems so milky compared to the small one..

  • Don't you just hate how there's no standards to sizes. Some places class the 2 fast right cups to be regular and large :/ If I wanted a Babycino I'd ask for it.

  • Asked at my local and was told 23g of beans in a medium coffee at 2:1 ratio (46g of liquid in the cup)

    In terms of milk I assume depends on their cup sizes, but would guess around 240ml / 360ml (8oz sml / 12oz med based on starbucks sizes)
    Frothed milk is stretched with water and air so it's not a simple to find that exact amount

    Small cup is typically 1 shot, med is 2 shots and can only assume large is 3 shots

    We use 20.6g for a double shot, this is decided by the coffee roaster. Small 6oz cup one shot, Medium 12oz cup double and large 16oz cup triple.
