If you can ask locals in Coober Pedy, a lot of these towns have a courier company that does a run with a truck one or twice a week from a major centre. You won’t find it on google necessarily, but most locals will know. I often organise for medical equipment to be transported to people in remote locations, I just ask the local nurses. But yes sometimes the cost of transport is more than the item.

I suggest checking any road freight or movers that can carry the fridge as a back load. A quick Google search reveals quite a few that offer back loading service, although I'm not sure if they will service Coober Pedy. In my opinion, that'll be cheaper than the $500 you have been quoted. Definitely worth checking.
