Building a gaming rig, have got an MSI Gungnir 111R case with a Noctua NH-D15S CPU cooler. Am looking to upgrade the default 120mm exhaust fan to something better/quieter - am considering either the Noctua NF-S12B Redux PWM or the Noctua NF-P12 Redux. As I understand it, the S12B is an airflow fan which works best without obstructions, whereas the P12 is a static pressure fan which is fine with obstructions.
My confusion arises in terms of the large dual-heatsink of the NH-D15S CPU cooler I'm using.. Would this be considered an obstruction, meaning I should go for the static pressure fan of the P12? Or would the S12B work better as an exhaust?

Not relevant to your question. But I was considering putting the same CPU cooler that case. Do you mind sharing a photo of it to see what it looks like and for clearances?
Just turn down the stock fan speeds in bios if noise is the reason. There is no point in upgrading the rear exhaust fan especially in your case which has a good stock fan layout already.
If you are considering Noctua, the A12x25 is the only answer.
I second this, I have the Noctua NF-A14 (140mm) and the A12x25's in my case and it is whisper quiet and I get really good temps and I have the Ryzen 5800x which is known for being quite warm (I use a Noctua NH-U12A CPU cooler).

In the redux line, Noctua recommends the pressure-optimised NF-P12 for heatsinks and radiators and the airflow-optimised NF-S12B for use as a case fan.
I've developed a new hobby over covid, watching youtube reviews on cooling fans - Check some out, they are really quite interesting. After many hours on the couch watching these videos I determined that the Arctic P12 PST PWM (often on ozbargain), are they best price/noise/performance fan for my systems - they are so cheap (and quiet) you can install 1-2-3-5 of them get way more air flow and still be cheaper than a noctua redux or similar.
Phanteks T30, although you can't buy it anywhere for a reasonable price.
