My email inbox was getting full so I deleted all cashrewards emails, then realised that I had Choice giftcards, so in the deleted items folder I clicked on recover items deleted. I then searched for choice gift cards, and the emails appeared with the date, subject line and sender, but the emails wont open. Is there any way to open them?

I would think M$ IT Support might be able to help you out more than the trolls on OzBargain IT Support. 😜
I sorted it thanks God, I clicked on Advanced options, then create task, and then was able to open email in panel.
I exchanged them now and saved then in usb, will print as wellOh Pam
Some cloud based emails, allow resetting your email account to a previous state by date. Yahoo mail had that functionality but a few years back. May be an option. You need to back up your current emails before using this option.
A post I can relate to, used to be able to drag deleted emails back out, now no options lead to recovery even though it says "recoverable items".
