From a cursory glance they appear to include a reciever that mixes virtual surround from optical input.
I think they are just trying to distinguish these wireless-with-a-base-station headphones from portable wireless headphones (bluetooth).
I have the same question….I find so many things on OZB that I never knew I NEEDED (as opposed to wanted) ☺️

I can't put up with lip sync issues, even using Bluetooth 5. So for me, yes.
I have had the HDR 170 for 7 years, still going well. I think RS175 are 2 gens after mine. If they use the same technology, it’s heaps better than any bluetooth connection. Great sound and comfortable. The price seems very good.
My RS160 are a similar age and still perfect too.
The sole reason I'm after the RS175 is that my recently purchased x9500h doesn't play well with the 3.5mm.
To get sound from the TV speakers I have to unplug the transmitter from the TV. Turning it off isn't good enough. With optical though Sony assure me that I can choose between different audio output, without having to physically remove the plug from the TV everytime.
I have the RS160, it is excellent for the sound quality it still blow a lot of Bluetooth headphones out of water, just sometimes there is a static noise especially in the gaps between different songs, I think you can probably use RS160 with RS175 transmitter, at least that is what previous RS170 transmitter could do.
I did think about that. I read somewhere (Amazon review I think) that the 160/70/80 etc aren't compatible with the newer transmitters. Perhaps because they don't use Kleer anymore, just a guess though.
I've never listened to music on my 160s but I know the noise you're talking about. Mine give off a VERY faint high pitched noise in movie parts that are quiet/have no sound. That's the only time it's noticeable. I believe the XX5 models have have solved that though. We'll see.
My RS 185 are still my primary home headphones after six years. They're third in a succession of Sennheiser RS wireless sets going back 21 years! Picked up a spare set some time ago in a Sennheiser outlet sale, as doesn't look like there's going to be a direct successor - everything's shifted to closed-back Bluetooth (of which I've owned many but they're yet to tick all the boxes required to fill the role of the older school Sennheisers).
Regarding your TV, looks like the 3.5mm out has reduced functionality on newer Android Sony TVs and their official line is "omg that's such a shaaaaaame, guess you'll just have to switch to digitaaaaaaaal". My Sony TV, a Linux-based lower-end model (X70G), still has settings that let you choose whether or not to mute the speakers, and can also set the output to a fixed level.
I'd love a pair of RS185. Open-back headphones are by far my favourite. I couldn't find any good deals on them though. It's crazy to think that the Sennheiser RS series haven't had any competition, at least not that I know of. My RS160 are so comfy so I hope the 175 are the same. I ended up buying 2 pairs as well - one as a spare.
I thought that latency with BT headphones might have been sorted by now, but it doesn't seem to be the case. It's real hit or miss. Some people are more susceptible to lip sync issues than others, so that doesn't help either when researching which BT cans could be viable.
