Digital eBay gift cards used to be available via PayPal Digital Gifts via this link, but they're not selling these anymore?
I also can't find any here.
Does anybody know why?

Yeah, I wanted to use a single use voucher to buy a gift card so I can split my purchases.
Otherwise I need to find items to buy for the entire amount, or I forfeit the remainder of the voucher balance.By buying a gift card, you can also circumvent the not being able to "stack" vouchers.
I thought eBay stopped people from using vouchers (e.g. vouchers for signing up to eBay Plus) to purchase a gift card a while ago. I tried doing that in May when I got a $50 eBay voucher from signing up to eBay Plus, and it didn’t work.
It was still working depending on which voucher, e.g a re-issued voucher in case of refund.
I still bought one in September with a voucher
@johnmelb: My last purchase from paypal digital gifts was 28 Sep. I hope this is just a temporary pause - that did happen once before

The response I got from them:
PayPal sold digital gift cards is no longer be available on eBay. If you would like to purchase PayPal-sold digital gift cards, please check our website at PayPal.com/gifts.

Probably something to do with eBay parting ways with PayPal. eBay has forced all sellers (payments) to go through eBay themselves instead of PayPal.
You can still buy gift cards from PayPals website
