the only notable upgrade is bigger screen.
no new faster chip.
definitely getting the wifi version only

Getting Apple Watch 7 personally but no need for Cellular version.
I think Cell is important if you enjoy streaming music without running / walking with a phone, although can you stream offline on the watch?
I have never been in a situation without my phone and cannot imagine that, even with an Apple Watch.
Yes it has been a couple of months you can download for example a playlist from Spotify to your watch and play offline without mobile when running.
Along with the larger screen, the Series 7's always-on display is supposedly brighter indoors, you get the type/swipe keyboard, fast charging to 80% in 45 min (with compatible wall plug), and supposedly a more crack resistant display and IP-coded dust resistance.
Whether that's worth the $140 difference is up to you though.

Cellular is not needed.
You pay extra for the watch, the number sharing addon and the phone plan (only expensive postpaid plans from the big 3 telcos support it).
Then it actually turns itself off most of the time (whenever it can connect to wifi or your phone).
Get a series 7 Wifi and you'll never notice the difference.
OP, why do you want cellular? You are going to be carrying your phone around half the time.

You can download a playlist to your Apple Watch to play offline and not need your phone if you use Spotify. Not sure about Apple Music though.

I have a cellular and recently switched from Telstra so no more One Number.
Just get a belly band for your phone, that’s two months of a plan and you save your watch battery :)

sort of related.. but looking at 2nd hand apple watches
are there any pitfalls to keep an eye out for? (like iphones are icloud locked, or the seller says its stolen and locks it etc etc)
I don't think you can go wrong with the Stainless Steel in colour.
I was choosing between Starlight and Midnight but ending up getting the GPS Aluminium 45mm Starlight since it's seems to be the most flexible to style with. I'll probobally upgrade to Stainless Steel in a few years if end up really liking the Apple watch.
Blue also looks really good but it seems harder to match bands.
Honestly I think my choice might change once I can see them in person, Its kind of hard to judge looking at pictures from only 2 different angles…
If you want to use the watch for sleep tracking and alarm/wakeup (two of the best reasons to use a smart watch, IMO), then $150 is worth it for the faster charging. So get the Series 7.
If charging isn't a relevant feature, then I would say get the series 6.
