Where to Redeem Discover Voucher from NSW Dine & Discover?

Hi Team,

With the NSW Dine & Discover vouchers being extended til 31st Aug 2021, where is a good place to redeem your Discover voucher?

The only other post I could see was to donate your voucher to Symbio Wildlife Park, but that seems like a scam to double dip - https://www.ozbargain.com.au/node/631214

Happy to let them expired if needed, but was wondering if I could redeem them for something useful.
