Just wanted to ask about peoples experiences when signing up or 5 or more services. Did they Telcos only require additional documents or wanted you to come visit a store in person? Any unexpected issues you faced?

Do you declare when they ask if u have more than 5 or just ignore? Have they ever asked you to visit store in person? Thats what Optus told me over phone
I'll tick the box but never been asked to go in-store.
Most MVNOs don't have physical shops anyway, so it's impossible for them to verify ID in person regardless. It all has to be online/external checks on whatever you provide them
For a prepaid service
They always ask me for like driver's licence/passport/government photo ID
For a post paid service (and mainly the 3 big telcos themselves)
They also ask me additional stuff for their credit checks like bank statements, employers, average salary etc. what so ever not.You get asked for ID when activating any number in Australia, as the law requires that every single phone number has an identity attached to it.

You only have to say "no" when they ask you if you have 5 or more.
The alternative is just to buy overseas prepaid SIM cards which can be used here with roaming with no issues, and no ID checks.
I had to sign up ~20 SIMs as part of an iPad workplace deployment in 2011. For most of them I needed to email Telstra a scan of my licence (each time - ugh). Haven't had any more recent experience.
I've got likely 20 assorted SIM cards in my name over the years, and have yet to have anything flagged by a telco about it.
I might be on ASIO's watch list, sure, but as long as the money flows the providers really couldn't care less
