They put the unsealed boxes on the shelves and store the carts behind the counter so it's not like there was any shrink wrap or security device as mentioned in their refund policy.

I "opened" it in the store, they have the empty cases on the shelf so they can still sell it.
Opening and using are two different things, and you know that. Otherwise you wouldn't be making this post, you'd already be at Target trying to return it.

When you change your mind
At Target you have 60 days to return your items (some exclusion apply) for a full refund or exchange as long as it is returned in a saleable condition with original proof of purchase. The refund will be provided using your original payment method.
By saleable condition we mean that the item hasn’t been opened or used, is still in its original packaging and all manuals, packaging and accessories are included.
Computer games, CDs and DVDs must have the original security seal or and shrink wrap is intact.
If you can’t provide proof of purchase, you will be asked to provide identification for Target exclusive products, containing your full name. We will record your name and form of identification provided, and we’ll offer you an exchange coupon to the value of the current price of that product.
If you can’t provide proof of purchase and the item is national branded we will be unable to provide you with an exchange coupon or refund.

well I changed my mind and there was nothing sealing it so it's 100% in as saleable condition as it was. I'll report back.
Don't they usual put the target sticker on the case when you buy it. The sticker says cannot return if sticker gone or broken.

If you didn't know if you would like it you should have bought it from EB, who have a 7 day change of mind policy
What did they say when you asked them?
They probably will, as you could claim you never used it, and say it is a change of mind return as most Aussie retailers sell "BRAND NEW" Switch games who are not actually brand new. They literally can not tell the difference.
Take a look into my thread, Aussie Retailers Selling Physical "Brand New" Nintendo Switch Games Which Are Obviously Not Brand New - Why Is This Allowed?. They deserve all the refund abuse coming their way for not selling brand new games in shrink wrap.
You didn't check any reviews before purchasing?
I doubt they'll take a return because you don't like it. Once you've opened it and had a play, you've relinquished any "change of mind" policy a store might have.
You can always try, but it's not really right.
