I booked a trip with groupon to go on a wine tasting weekend in the Hunter Valley with my girlfriend but unfortunately I don't think I'll be able to go.
It sounds like Groupon won't be giving me a refund and neither is the venue.
Does anyone have any creative ideas to use it? It cost me ~$400+ for "~$600 of value".
Let me know if you've got any other good ideas for what I could use it for! I hate seeing things go to waste!

They said they could take up to 7 days to respond… it expires then.

Might depend on the actual T&Cs of the deal that OP purchased. A further possible complication is that if OP has made a booking with the venue and that causes the voucher to be considered as redeemed.

We only paid for accommodation so far, which our host said we can move to another date.
Why are you not able to go? Do you live in one of these 5 suburbs?
It's not suburbs, it's seven LGAs. You live and/or work in them, you can't leave metropolitan Sydney.
I suggest you read up on the current restrictions as it sounds like you could do with a refresher.
Might be unethical but maybe you could tell then you've been exposed to a tier 1 site or are starting to show symptoms. I don't think they would want to be associated with being a super spreader site
Just ask for a refund, or a credit.

Have you tried asking if the venue would be willing to allow you to change the date (given the situation) or the guest's name?
If they allow you to transfer the booking to someone else (but nothing else), then your best bet might be to sell the package at a discount.
